Gluten Free Blueberry Banana Bread

Pre-heat oven to 350 degrees F. Grease a 9″ circular pan, or equivalent.


Whisk together:

1 1/2 cups gluten free flour (equal parts corn meal, brown rice flour, and arrowroot powder)

1 1/2 teaspoons baking powder

1/2 teaspoon salt


Beat in a large bowl (or blender) until creamy:

2/3 cup natural sugar

1/3 cup softened butter or cooking oil

2 teaspoons lemon juice


Beat in (or blend):

2 eggs, beaten

3 mashed, ripe bananas


Add dry ingredients to wet, beating until smooth. Fold in any or all of the following:

1/2 cup chopped walnuts

1/2 cup blueberries

1/2 cup finely chopped dried apricots or other fruit


Scrape the batter into greased pan. Bake about 30 minutes or until a toothpick inserted into the center comes out clean. Cool before slicing.
