Gluten Free Crepes with Applesauce

CREPE

1 cup gluten free flour (equal parts cornmeal, arrowroot starch, and brown rice flour)

1 cup milk or almond milk

1/2 cup warm water

4 large eggs

1/4 cup melted butter

1/2 teaspoon salt

Combine all ingredients in a bowl and mix until smooth. Pour enough batter into a hot, greased pan to coat the surface with a thin layer. Rotate the pan to spread and cover. Flip after 1-2 minutes. Remove when lightly browned.

 

APPLESAUCE

Chopped apples (pears, peaches, and berries also work great)

Sweetener (optional)

Cinnamon (optional)

Place chopped fruit in a saucepan. Add water up to 1/2 inch. Cover with a tight fitting lid. Simmer until fruit is soft. Mash with a potato masher. Add sweetener and spice to taste.
