Markovitz Salsa

1 1/2 c onion
8 c chopped tomatoes
3 tbsp cilantro chopped
3 tsp salt
6 tbsp lemon juice
3/4 c vinegar (2 tbsp vinegar per cup salsa)
garlic
1 tsp pepper flakes
green onion/scallion
3 jalapenos, some seeds
2 tsp cumin

Bring to boil then cook 10 minutes. Can in water bath 15 min.
