Skillet Cornbread for a Crowd

Ingredients

  • 7 cups cornmeal
  • 3 cups brown rice flour
  • 2 cups arrowroot powder
  • 4 t baking soda
  • 8 t baking powder
  • 4 t salt
  • 1.5 cups sugar
  • 6 cups coconut milk (42 oz)
  • 8 eggs
  • 1.5 cups oil

Directions

Mix the wets.
Mix the dries.
Combine everything.
Bake in a super huge cast iron skillet at 375 for 35-40 minutes. So good.
