Summer Fritata

Dice and lightly saute approximately 4 cups of the veggies you like in olive oil for about 5 minutes – veggies still should be firm. You can use scallions, beets, beet greens, squash, kale, beans, peppers, and cauliflower/broccoli from your share. In a bowl, beat 12 eggs until fluffy. Stir in the sauteed veggies. Add salt, pepper, and herbs of your choice (parsley and basil work well). Pour into an oiled baking dish and bake at 350 for 30-40 minutes until golden brown on top and firm. Yum!
